Recipe adapted by me from Bob’s Red Mill recipe (with links to ingredients I used)
1 3/4 c Bob’s Red Mill Whole Wheat Flour https://amzn.to/4dsKlBZ
1/2 tsp salt
1 c Santa Cruz https://amzn.to/4eBmscy peanut butter
1 c honey
1/4 c coconut oil or butter
1 egg beaten
1 1/2 tsp vanilla
Ghirardelli Chocolate Chips https://amzn.to/4eoPxbl
Preheat oven to 350°F. Grease a baking sheet or line with parchment paper.
Whisk together flour, baking soda and salt. In a separate bowl, combine peanut butter, honey and coconut oil. Add egg and vanilla and mix well. Add flour mixture and gently stir until combined.
Scoop dough into 2-Tbsp balls and place 1-in apart on prepared baking sheet. Bake for 10 – 12 minutes or until golden brown. Cool on baking sheet for 5 minutes. Move to wire rack to cool completely.
